Dessert of the day: Easy Roll Cake

   It is easy recipe of roll cake, and it takes not too much time. For me, it took 30 minutes and baking time was 10-12 minutes. Okay, you need glass about 250 ml.
   Dough:
   1/4 glass of milk
   2 tbsp.butter
   100 grams of flour
   40 grams of potato starch
   1 tsp.of baking powder (or 1 tsp baking soda)
   2/3 glass of sugar
   1/4 tsp. salt
   3 eggs
 
  Filling: any kind of jam (I used Lingonberry jam of IKEA), whipped cream (200 ml cream half cup powdered sugar), chopped walnuts.
    
   Preheat oven to 190 C°. Cover the pan with parchment sheet. In saucepan, heat milk with butter almost to a boil. Beat eggs and sugar with a mixer to increase the weight of three times (it should have the consistency of thick cream). Beat about 10 minutes. Sift flour with baking powder, starch and salt. Pour flour mixture into the beaten egg, stirring gently from the bottom up a shovel. Add a few spoonfuls of dough in the warm milk and butter and mix well. Pour the mixture into the basic dough, mix well.


   Put the dough on a baking sheet, flatten and bake for about 15 minutes (depending on your oven. If you overdo it, roll can go wrong, because dry up.)


       The finished cake will have a golden surface, cake can be folded or roll immediately after cooling.


                    Prepare whipped cream with powdered sugar.


                        Melt a little bit of jam, lubricate.


                         Put the cream on the top and roll it.




                         I sprinkled the cake with chopped walnuts.

Cutlets

   Again I was cooking meatballs. But this recipe is special :) Cutlets by my way, with a little surprise inside - with a cheese. And one more important detail, I am baking them in the oven instead of frying. For the cutlets: ground beef, onion, a little bread soaked in milk, 1 egg, spices, salt and garlic. Mix all ingredients.
   I prefer to "beat" every cutlets. For what? To make mincemeat become more plastic, it is necessary to "beat" - to pick up and throw into the cup. And several times. Then, to form a patty from meat and in the center put the cheese.


                                           Form a cutlet.


      Roll them in flour or breadcrumbs. (Sorry for the blurred image)


   Put them into the pan with a well-heated vegetable oil and fry on both sides over high heat until browned crust. This frying is necessary just for the "stamp" cutlets, for the getting crust.


   Frying at high temperature does not allow oil to get into the cutlets they serve only to the rouge and crispy crust.


   Then put cutlets into the greased oven glass plate or baking sheet. And bake at 200 ° C for 20 minutes.


    Garnish choose at your discretion. Mine is pilaf with green peas.

"Hedgehog"s or meatballs with rice under soft sour cream sauce

   Meatballs with rice (tefteli - rus.lang.) was big surprise for my husband :) He loved it very much, so I decided to post the recipe. Although my friends from Russia and Uzbekistan know it very well, but I am sure that everyone has own way of cooking them. So, let me share mine.
     You'll need:
- 400g minced meat (with onions, salt and pepper)
- 0.5 cups of rice
- 2-2.5tablespoons of tomato paste
- 150g sour cream
- 1/4 teaspoon salt
- pepper
- spices (as you wish)

                           Boil the rice until almost ready, drain, do not rinse. Cool.


                           Mix ground beef, rice and 1 tablespoon of tomato paste.




Mix with hands, and you'll get the mass more adhesive and at the further formation hedgehogs will not fall apart. Roll the balls about 5 cm in diameter.


                                        Grease the bottom of the oven glass plate


                       Then put meatballs close to each other, but not crushing them



Make a sauce-filling: mix the sour cream with 1-1.5 tablespoons of tomato paste, salt and pepper. Add spices. If the sour liquid (flowing) - do not add water. If thick, add about 0.5 cups of water.



          Thin stream directly from the bowl to pour each ball with creamy tomato sauce



   Place in preheated oven and cook at 180-200 ° C until the top crust, about 30 minutes








Apple tart

     Today I am posting recipe of apple tart which I tried to bake at first time. It was easy to make and took not too much time.
      For the pastry: 
- 300 g of flour;
- 150 g + 50 g of butter;
- pinch of salt;
- 2 tablespoons + 2 tablespoons sugar;
- 1 egg + 1 egg yolk;
- 1 tsp baking powder;
- 4 or 5 apples;
- 2 tablespoons milk;
- 1 tablespoon breadcrumbs / chopped almonds;
- 100 g of sour cream.

   Flour and 150g butter grind into crumbs. Add salt, baking powder, egg, 2 tablespoons sugar, sour cream and make the dough. Rolls it into a bowl and put in the refrigerator for at least half an hour.

                Prepare a liquid caramel with 50 gr of butter and 2 tablespoons sugar.

                             
                                                            Cut the apples.


  Add to the caramel apples, stir and simmer for 5-7 minutes until fruits become soft.


                                   Divide the dough into a large and smaller parts.


    A large roll out into a circle and lay it in the baking dish, pressing dough to the sides. 


Put the bread crumbs/crushed almonds, for absorbing the excess moisture. Then put the stuffing on top.


Now prepare the "cover" for our cake. Roll out dough, cut into thin strips, forming a lattice. 


                                          

                                           Cut off any excess with a knife.


 Lubricate the cake with mix of milk and egg yolk, and send in a pre-heated 180 ° C oven for 35-45 minutes.






Baked potato slices

   I love potato in different ways - boiled, fried, baked. But this one is my favorite, this crusty and delicious, oven-roasted potato slices recipe is easy to make. The important thing that children will love it very much, preparing potatoes by this method will be a great alternative to French fries.




   Add spices: salt, mint, oregano, cumin, basil, coriander, red pepper, black pepper, minced garlic, rosemary and olive oil.






        Preheat the oven to 180 ° C and bake for 35 minutes, or until well browned, crusty edged


Chuchvara (Uzbek "tortellini")

 Chuchvara belongs to the family of dumplings and is similar Italian tortellini, Ukraine vareniki, Tibetan momo and etc. Uzbek chuchvara's stuffing is consist of chopped meat and onion.
   For the dough: flour, 1-2 eggs, salt and warm water.
   For the stuffing: minced meat, onions, cumin.





Here is shown one of the ways of making chuchvara, but in Uzbekistan you can face different types of forms.
















   Now, you can put them in boiled water and cook like pasta and serve with various sauces or after cooking you can fry them or bake with grated cheese in the oven.
