Pilaf with anchovies (Hamsili pilav)

   Here is pilaf with fresh anchovies which is popular in Turkey. Especially it is a dish of turkish Black Sea regional cooking. We need 1 kg of fresh anchovies, cooking oil and bowl. For pilaf I posted recipe before. You can find it here:



Prepare pilaf according to the recipe



Remove the heads of the anchovies with your fingers. Run your thumb along the backbone of each fish to separate the two halves and remove the backbone. Wash the anchovy halves and drain them. 












Bake the anchovies and rice in 180 °C oven for about 45 minutes or until the anchovies are cooked and browned.


Remove the dish from the oven and let it rest for a few minutes.Turn the baking dish upside down onto your serving plate.









Quiche (Lorraine) with mushroom and chicken filling

   Once upon time my husband asked me had I ever taste a quiche. The name of this pie was strange for me and when I began my research about it in the internet I faced too much recipes with too much different variations. Unfortunately, I don't remember where I found this recipe, otherwise I really loved to share the original recipe link with you. But here the way of cooking it. 



Dough:
125 gr chopped butter
1 eggs
3 tablespoons cold (ice) water
250 gr of flour

Mixture:
2 eggs
200 ml light cream
200 gr grated cheese

Filling:
250 gr mushrooms
150-200 gr onions
300 gr chicken fillet

   Make a dough, leave for an hour in the refrigerator. For the filling saute the onion with mushrooms and chicken fillet. 




     Preheat the oven 180° C. Bake about 30-40 minutes.





Apple-cherry pastry

This is perfect recipe for those who love the combination of apple and cherry.




For dough you'll need:
2.5 cups of flour
100 gr butter (melted at the room temperature)
1 egg
0.5 pack of baking powder
2 tablespoons of powdered sugar
2 tablespoons of yogurt

Filling: 2 apples (grated), 1 cup of cherry, 100 gr of walnuts, 100 gr of sugar.

First of all we'll prepare a filling. Put apple on hot pan, wait for 2-3 minutes. After that mix with cherry. Add the sugar and mix. Then put the walnuts and take out of the stove.

Puff rolls with cream

   Puff rolls are the taste of our childhood, people of ex-Soviet Union. Now it is easy to cook them because of ready puff pastry. You'll need pastry for rolls and condensed milk with butter for the cream. Or make meringue or any you favorite filling. Even salted filling with cheese is a good variant.


















Hotpot omelet

   I don't know how about you, but I am facing with a question "what should I cook for breakfast today?" every morning :) Breakfast is the most important meal of the day, so it should be useful, tasty and easy as well. And here is the easiest one. Hotpot omelet. We need: sausage, cheese (better use several types), greens, egg. Cut them in small pieces, mix with egg. And that's all! Bake at 180° C about 10 minutes. It will be airy and tasteful beginning of the day.


Uzbek samsa (Varaqi somsa) Somsa Самса

   I have already given the way of cooking samsa with ready puff pastry dough. And now I'd like to prepare it with homemade puff pastry dough. In Uzbekistan, we make it with different ways.     So we need: 500 gr flour, 220 ml water, 20 gr of salt, 200-250 gr of butter (we use fat) for grease in between layers. Filling: 300 gr.minced or chopped meat, 350-450 gr onion, 1-2 potatoes (optional), 2 table spoons oil, salt and spices. (20-25 pieces)



 Knead the dough, should be not soft. Melt fat or margarine, butter (as you wish). We choose fat, because it keeps the layers separate. 



Cut the dough into 2 pieces. Roll out it and brush with butter. Let harden. Then roll the next piece on the another table, put it on the first buttered layer. Brush with butter or fat, let harden again. Then roll the layers together.












Put the ready pastry in refrigerator for while, then just cut about 2-3 cm and roll out small circles.




Put filling (I made pumpkin filling)  and fold into triangles as shown
