Pies with mushroom

For this recipe you'll need fresh mushrooms and yeast dough. Stuffing: 2-3 onions, 300-450 gr of mushrooms, coriander, cumin, salt, 2 boiled eggs, 1 s/spoon of butter. Dough: 5 g of dry yeast, 500 g flour 30 g sugar, 0.5 tsp salt, 1 egg, 80 ml of vegetable oil. I kneaded the dough with the buttermilk. Dough should be soft.


Knead the dough for at least 10 minutes and cover with plastic wrap, put for a warm place for 1-2 hours.



In a pan fry onions until golden brown, then add the chopped mushrooms. Cook until evaporated water, add salt, spices, boiled egg, 1 tbsp butter. Cool the stuffing.



                           After an hour knead the dough once and put again to rise.














Pies before baking need to stand for 10 minutes. Grease the tops with egg and bake 20-25 minutes at 180-200 ° C.

Cake for my Husband (Meringue cake or "Count's Ruins)

It is a very very simple and delicious cake. I made it for my Husband's birthday. (An interesting fact is that our birthdays are at the same day, so I can say this cake is our Birthday's cake). It consists of sponge cake as base and pasted meringues by using soft cream.



So you'll need to prepare sponge cake and meringues by using these links of the posts which I posted before:

Try to make different sizes of meringues that they like really ruins.
An extra preparation for cream to paste meringues: whipped cream (200 ml cream half cup powdered sugar), chopped walnuts.

Make a cream


                                       Put some of cream on the sponge cake


                                      If you wish add some roasted walnuts


                                                 Put some of meringues


                                    Cover with cream and put again some of them


                                                Cover again with cream


                                                     Again the same process




                              You can put roasted walnuts, grated chocolate and etc.

Easy sponge cake

It is easy way of baking sponge cake, and it takes not too much time. Baking time is 10-12 minutes. You need glass about 250 ml.

Dough:
   1/4 glass of milk
   2 tbsp.butter
   100 grams of flour
   40 grams of potato starch
   1 tsp.of baking powder (or 1 tsp baking soda)
   2/3 glass of sugar
   1/4 tsp. salt
   3 eggs

Preheat oven to 190 C°. In saucepan, heat milk with butter almost to a boil. Beat eggs and sugar with a mixer to increase the weight of three times (it should have the consistency of thick cream). Beat about 10 minutes.


Sift flour with baking powder, starch and salt. Pour flour mixture into the beaten egg, stirring gently from the bottom up a shovel.




Add a few spoonfuls of dough in the warm milk and butter and mix well. Pour the mixture into the basic dough, mix well.


                                        Grease with oil any form for cakes




         Bake about 10-15 minutes, the finished cake will have a golden surface.

Beans with Turkish bacon (Pastirmali kuru fasulye)

Soak the beans previously by adding 1 teaspoon salt and 1 teaspoon of sugar (better to do it in the evening if you are planning to prepare next day), 2 onions cut into cubes, fry in olive oil until golden brown. Then, add the grated tomato and 1 tablespoon of tomato paste. Stir and fry for 2-3 minutes. After that, add the beans. Fry for 2-3 minutes, add the bacon and continue to fry for another 2-3 minutes. Add salt if the bacon is not salty. Pour the water content of the water covered it. Close the pressure cooker lid and put on a program designed for beans. And if you use ordinary bowl the cooking time depends on the beans - as soon as it is cooked, you can serve. But the most interesting fact if you leave it to rest for a day or two in the fridge, it sauce gets thicker and tastes better.

Beze Cookies (Meringues)

Meringue (beze) is the most popular dessert, especially for kids. And there many different recipes of desserts by using meringues. Next time I'll try to post cake which absolutely will consist from them. But now bezes: you'll need: 3 egg whites and 3/4 cup of sugar.


Separate egg whites from egg yolks, then put egg whites to the mixer bowl and start beating them up on a high speed (make sure what mixer bowl and mixer attachment are absolutely clean and dry, even 1 drop or water or oil can ruin meringues).




Beat egg whites until they form solid white foam about 3 times volume of the initial egg whites. Then start adding sugar, spoon by spoon, and continue beating. Beat until all sugar is mixed in and completely dissolved.








Lay shallow baking pan with a sheet of parchment paper, warm oven up to 100° C. Using spatula carefully (filling is sugary and therefore sticky) fill the pastry bag with enough of the filling and tie ends.



Put baking pan to the oven warmed up to 100° C and let meringues dry for 1-1.5 hours, depends of the size of cookies it may take longer to dry (the bigger they are the longer it takes). Once ready, remove baking sheet from the oven and let meringues to cool down. Ready cookie should be easy to separate from the parchment paper, they should be crispy from outside and inside when you bit it and it should not stick to your teeth.
